Peppery Chicken: Quick and Easy Grilling

When time is at a premium, healthful eating may not always take priority. As with anything, it requires a little forethought to make it work.

This simple chicken recipe can quickly be prepared for your family or company, with enough left over for another meal – – hot or cold. A bag of frozen chicken breasts is a welcome staple for last-minute meals.

Peppery Chicken

8 skinless chicken breasts

2 T. olive oil
2 T. soy sauce
2 T. honey
1/2 t. thyme
1/2 t paprika
1/4 t. cayenne pepper
1 T. white vinegar (Balsamic is fine)
1/2 t. allspice
1 t. pepper
2 c. sliced mushrooms (= 8 oz package of mushrooms)

Place chicken breasts in a large pan. Mix all remaining ingredients together and pour over chicken. (How’s that for simple?) Grill or bake at 375 degrees until the interior of the chicken reaches 165 degrees. If you prefer, you can halve or double this recipe.

Until my next post, 4 whatever it’s worth…..

  1. I keep chicken breasts and shrimp in the freezer for last minute dinners as they thaw so quickly and are so versatile.

    • Great idea to keep shrimp on hand, also! I’ll have to add some to the freezer. Thanks for the tip! And, thanks for reading 4 whatever it’s worth!
